A top chef who worked under Heston Blumenthal has revealed the secret to the perfect scrambled eggs is to constantly stir the mixture to create soft, silky curds.

British born chef Robbie Bell, who’s the head charcutier at City Larder in Melbourne, shared a now-viral TikTok video showing exactly how he made the breakfast dish.

To make the soft, creamy scrambled eggs, you’ll need eggs, crème fraîche or sour cream, butter, a pinch of sea salt, cracked black pepper and dill.

‘Simple but not often executed correctly, scrambled eggs… there is no rushing them and constantly mixing is the key for me,’ Robbie said.

‘I like my scrambled eggs sloppy and with fresh dill.’

To make the scrambled eggs, he cracked eight eggs into a bowl and he used a fork to whisk it together.

In a pan over medium heat, he melted a generous amount of butter. As the butter started bubbling, he poured the egg mixture in.

Using a silicone spatula, he immediately stirred the eggs around around the pan as the curds started to form.

‘The trick is to don’t stop staring,’ Robbie suggested about keeping your eyes on the eggs at all times during the cooking process.

Robbie then added a dollop of crème fraîche, and continued stirring the eggs. If you don’t have crème fraîche, he said sour cream is a good alternative.

His video has since been viewed more than 70,000 times, with many describing his scrambled eggs as ‘chef’s kiss’. 

‘That looks like the best scrambled eggs ever,’ one wrote.
